Wake Up with this Perfect Coffee Cake Recipe

Coffee Cake

Just thinking about coffee cake makes your mornings better, doesn’t it? After all, what is not to love in a deliciously moist slice of coffee cake? With yummy flavors of cinnamon, walnuts, and a streusel topping, this is really a dessert eaten as breakfast!

You can use apples, bacon, pecans, or other ingredients to create a coffee cake of your liking. I like something a little even more different- raspberry cream cheese coffee cake. The layers of cream cheese and raspberry filling between a buttery cake is just a perfect start to my day. Read on to get the recipe below.


  For the cake

  1 1/2 cups all-purpose flour
2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup sugar
9 tablespoon unsalted butter (room temperature)
6 tablespoon sour cream
6 tablespoon milk
1 egg
1 egg yolk
1 1/2 teaspoon vanilla extract

For the filling

8 oz. cream cheese
1/4 cup sugar
1 egg white
1/2 teaspoon vanilla extract
1/2 cup raspberries, cut in half
1/4 cup raspberry preserves

For the streusel

1/4 cup flour
1/4 cup packed brown sugar
2 tablespoon butter, melted

For the glaze

3/4 cup powdered sugar
1-2 tablespoon milk
1/2 teaspoon vanilla extract


1. Preheat oven to 350 degrees. Line a 9 inch cake pan with a circle of parchment paper at the bottom and grease the sides.

2. To prepare the streusel, add flour, brown sugar, and melted butter in a bowl and mix with a fork until all ingredients are incorporated. The mixture should resemble coarse crumbs. Set aside.

3. To prepare the cream cheese filling, beat cream cheese and sugar together with a mixer until smooth. Add the egg white and vanilla extract and mix until well incorporated. Set aside cream cheese mixture.

4. To make the cake batter, beat sugar and butter until light in color and fluffy, 3-4 minutes. Add sour cream and milk and mix until well incorporated. The mixture may seem a little curdled, but that is alright. Now add egg, egg yolk and vanilla extract and mix until smooth.

5. Combine flour, baking powder and salt in a separate bowl. Add these dry ingredients to the wet mixture and combine until smooth.

6. Spread half of the cake batter into the bottom of the cake pan.

7. Spread the cream cheese filling evenly over the cake batter. Spread the raspberry preserves over it. Then arrange raspberries in an even layer over it.

8. Spread remaining cake batter over the filling, then sprinkle the streusel evenly over the top of the cake.

9. Bake the coffee cake for 40-45 minutes. It should be a deep golden brown color on top.

10. Allow the cake to cool and remove from cake pan.

11. Combine the glaze ingredients and whisk until smooth. Drizzle over the cake.

You can serve this cake warm or refrigerate it and serve it cool.

While this cake does not contain coffee, it makes a perfect pair with a cup of freshly brewed, hot cup of joe!
