- ¼ teaspoon cinnamon powder
- ¼ teaspoon of baking soda
- ¼ teaspoons of salt
- 2 cups of cake flour
- 1 ¼ teaspoons of baking powder
- ¼ teaspoon fresh nutmeg powder
- 10 tablespoons of unsalted butter
- 6 egg yolks
- 3 tablespoons of vegetable oil
- 3 egg whites
- 1 teaspoon of vanilla extract
Preheat your oven to 350°F. Place the oven rack you will use in the middle.
Line a few muffing trays and then spray them using nonstick spray.
Mix all the dry ingredients including nutmeg, cinnamon, sugar, salt, baking soda, baking powder, and flour into a large bowl. Whisk this mixture until all the ingredients are well combined.
Mix the unsalted butter, egg yolks, vanilla extract, oil, and buttermilk into another bowl.
Whisk the egg whites in a different bowl until they are foamy. This should take almost 30 seconds. Add some sugar to the whites as you continue whisking for about a minute. Set this mixture aside.
Put the dry ingredients mixture into the mixer and run it at a low speed. Add the wet ingredients slowly and continue mixing until they are well blended. This takes about 20 seconds. You will have to stop the mixer to allow you to scrap off the mixture from the sides.
Add the whisked egg whites into the batter and stir slowly. This will lighten the batter. Fold the whites until they are no longer visible.
Put in the raisins. You can use as many raisins as you want.
Pour the batter into the muffin tins. Make sure you leave a little space in the cups to allow the batter to rise during baking.
Put the filled muffin tins in the preheated oven and bake for about 10 minutes. The cupcakes should be firm when baked. Insert a toothpick in the middle of a few of the cupcakes to test. The cupcakes are cooked if the toothpick comes out clean.
Take out the cupcakes and place them on baking racks while they are still in the tins. Allow them to cool for about 5 minutes.
Remove the cupcakes from the muffin tins and place them on a baking sheet to cool.
