Ingredients

  • 2 cups of plain flour
  • 2 oz red food coloring
  • 2 eggs
  • 2 teaspoons vanilla extract

  • 1 teaspoon distilled vinegar
  • 2 tablespoons cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup of vegetable oil
  • 1 cup of buttermilk

Instructions

Preheat your oven to 170°C or 325°F.

Grease two cake pans and flour them. Use nine inch pans for this recipe. Line them with some baking papers after flouring. The papers will prevent the cake from sticking because it is quite moist.

Sieve the flour into a mixing bowl and add the salt, cocoa powder, baking soda, and baking powder. Whisk these ingredients.

Mix the vegetable oil and sugar in a different mixing bowl. Add the food coloring to this mixture and then put in the buttermilk, eggs, and vanilla extract. Stir this mixture thoroughly then put in the vinegar and coffee.

Blend all the ingredients in a large bowl until you get a smooth mixture.

Divide the mixture between the two baking pans you prepared earlier.

Place the pans in the preheated oven and bake for between 30 and 40 minutes. The cake should not bake for longer than this.

Take the two cakes out of the oven and place them on cooling racks. Use a knife to loosen your cakes from the pans while they are warm. Peel of the baking papers and allow the cakes to cool.

Cream Cheese Frosting Ingredients

  • 1 cup of confectioner’s sugar
  • 1 1/2 cup of cream cheese
  • 300 ml of double cream or whipping cream

Instructions

Whip the double or whipping cream until it becomes fluffy and thick. But do not overdo it. Add the confectioner’s sugar and cream cheese into the whipped cream. Whisk these ingredients together until they are well blended. Add some butter to the mixture if your icing seems to be a little runny. Make sure the butter is at room temperature when you add it and use a little at a time while you blend the mixture.

Place one of the cakes on a plate. Spread one cup of the frosting on the cake. Put the second cake on top of the first one. Apply the rest of your cream frosting on the entire cake.
